The 2012 Cabernet Sauvignon, bottled in November, 2014, is drinking well now and will continue to do so well into the future. Many describe it as being soft with a silky texture as if it had already been aged in the bottle for 5 years. Aged only in used french oak barrels and hence has only a light oak influence. The fruit really shows through at this wine’s young age. Dark cherry, ripe blackberries, strawberries and vanilla notes on the nose and in the taste matched with the light oak influence has created a wine that drinks well by itself but is also very food friendly. Let breathe for an hour and notice how much it opens up. 50 cases produced and a three bottle limit. $60/ bottle
The 2013 Cabernet Sauvignon, bottled in July, 2015, is ready to drink now, especially if you let this one breathe for an hour. It will keep opening up while in the glass. Deeper and darker in color than the 2012, this wine was aged in 55% new french oak and exhibits all the characteristics of a Napa Valley Cabernet. Even at this early stage the wine, like the 2012, shows soft fruit tannins and is very silky in texture. The tannins from the oak barrels are just noticeable enough without overpowering the fruit. Like the 2012 the nose and taste are of dark cherry, ripe blackberries and vanilla but the 2013 comes with a hint of tobacco and oak. 515 cases produced. $60/ bottle. The 2014 Cabernet Sauvignon, bottled in July 2016, is tasting great right out of the bottle, especially for such a young wine. For fun, let it breath for an hour and notice how much it changes in the glass. This is great to enjoy now, but will continue to age well for years to come. This year’s vintage is 100% Cabernet Sauvignon aged in 55% new French oak barrels. It exhibits similar qualities as the 2012 and 2013 with notes of dark cherries, blackberries, and vanilla with hints of tobacco and oak. 515 cases produced $60/ bottle
